Resumen
Se aplicó una encuesta a una muestra aleatoria de
82 empresas vitícolas de riego ubicadas entre las regiones V a VII
de Chile, equivalentes al 4,8 por ciento del universo estadístico,
con el objetivo de describir la tecnología que actualmente aplica este
subsector agrícola, los cambios en la producción y los costos
asociados al tamaño de plantación, y el tamaño óptimo
de plantación. Se observó que la gran mayoría de los predios
usa riego por surco o por tendido, existiendo riego por goteo solamente
en un 12 por ciento de los casos, los que se concentran en las plantaciones
de mayor tamaño. El uso de agroquímicos aumenta con el tamaño,
lo que no ocurre con la mano de obra, que presenta coeficientes similares
en todos los estratos de tamaño. Las faenas mas intensivas en mano
de obra se hacen en la mayoría de los casos con mano de obra temporal.
La mecanización de faenas también aumenta con el tamaño.
Se estimó una función de producción de largo plazo, usando
superficie plantada como variable explicativa. Se observó la existencia
de retornos y costos unitarios decrecientes con el tamaño de plantación.
Para los rangos de plantación muestreados (hasta 193 hectáreas)
el valor del producto marginal es siempre superior al costo marginal, lo
que indica que es rentable seguir aumentando el tamaño de la plantación
mas allá de 193 hectáreas. Este estudio da soporte estadístico
a las funciones de producción y de costos estimadas, dentro de los
rangos muestreados. Si estas funciones fueran válidas en tamaños
superiores a los muestreados, podría decirse que el tamaño óptimo
del viñedo chileno de exportación estaría entre 232 y 315
hectáreas, dependiendo del precio de la uva y canon de arrendamiento
de la tierra que se considere realista.

Estimation of the Production Function of Chilean Irrigated Vineyard Farms

Abstract
This study aimed at describing the current technological
levels of the irrigated vineyard farm industry of the Central Valley of
Chile, by estimating the production, cost and productivity variations associated
with size and estimating the optimal plantation size. To that purpose, a
survey of 82 randomly selected vineyard farms, equivalent to 4.8% of the
statistical universe, located within the V to VII Regions of Chile, was
carried out between September 1997 and March 1998. It was found that the
majority of the farms use flood or furrow irrigation with only 12 percent
employing drip irrigation, mainly larger farms. The use of agrochemicals
increased with size. On the other hand, labor showed similar coefficients
of usage at all size levels. In all cases the most labor-intensive farm
tasks were performed with temporary labor. Mechanization was low but increased
with size. A long-term production function was estimated, using planted
area as an independent variable. The coefficients showed the existence of
diminishing unit costs (per hectare) and diminishing returns of scale. However,
the marginal product value was always greater than the marginal cost for
the size range surveyed, suggesting that optimum plantation size lies beyond
the biggest farm in the sample (i.e. beyond 193 hectares). Depending on
the average price for wine grapes and the opportunity cost of land, the
optimum plantation size would be found in the 232 to 315 hectares range.
Unfortunately these estimates have no statistical support, as they fall
outside the range of the sample, and they are offered here only as a best
estimate.
