Caracterización química y sensorial del vino artesanal de tomate de árbol (Cyphomandra betaceae (Cav.) Sendth)

Resumen
El tomate de árbol (Cyphomandra betacee Cav. Sendth) es un frutal andino altamente promisorio desde el punto de vista
conservacionista para zonas de ladera y por sus usos para consumo fresco, procesado y medicinal. Con el objetivo de
explorar un nuevo valor agregado a esta especie, frutos procedentes de una plantación comercial de cuatro años de edad,
ubicada a 2000 m.s.n.m (San Lázaro- Trujillo), fueron cosechados a madurez fisiológica y la pulpa fue extraída cuando
alcanzaron su madurez de consumo, posteriormente, para la obtención de cinco tipos de mostos, las muestras 4 y 5 fueron
escaldadas y las 1, 2 y 3 no se escaldaron. Con la pulpa resultante después de la separación de las semillas, se preparó el
mosto y fue corregido con adición de azúcar hasta un valor cercano a 21 °Brix, para su posterior fermentación, obteniendo
una bebida alcohólica artesanal tipo vino. Se utilizaron 2,4 kg de pulpa y 2,5 kg. de azúcar en cada tipo de vino, repetidas
cuatro veces. Variando la cantidad de agua 12, 15, 18, 15,5 y 15 litros respectivamente para la obtención de cinco tipos de
vinos o tratamientos, cuatro rojos (muestras 1, 2, 3 y 4) y uno blanco (muestra 5). Al producto obtenido se le determinó las
variables: pH, acidez total, acidez volátil y el contenido de sólidos solubles totales, siguiendo las normas de la Comisión
Venezolana de Normas Industriales (COVENIN 924-83, 3286-97). Los resultados obtenidos variaron en un rango entre
5,01-5,89 de pH, 4,47-6,22 g/l de acidez total, 0,39-1,71 g/l de acidez volátil y 4,3 – 12,6 ° Brix de sólidos totales. El
análisis de varianza no indicó diferencias significativas para las variables químicas entre los diferentes tipos de vino. Las
características sensoriales evaluadas (apariencia, color, olor y sabor) por el método de puntuaciones ponderadas indicó el
mayor puntaje (24,6%) para el vino 1 y el menor (12,3 %) para el vino 5. Los resultados sugieren al vino obtenido de la
muestra 1 como la mejor a nivel sensorial.

Chemical and sensorial characterization of artesanal tomato tree wine (Cyphomandra betaceae (Cav.) Sendth)

Abstract
Tree tomato (Cyphomandra betacee Cav. Sendth, Andes fruitful highly promise from the point of view for its use in the
soil conservation at zones with high slopes and for its widely use as human food as fresh fruits , in processing and in
medicinal use. The objetive of this study was to look for adding value of these fruits from a commercial plantation of four
years old, established at 2000 m.a.s.l (San Lázaro-Trujillo), where fruits were harvested at mature green stage and tomato
tree pulp were extracted when fruits reached the mature ripe stage, later on and prepared for the obtaining five types of
worts, samples 4 and 5 were blanching and samples 1, 2 and 3 were unblanching. The pulp obtained after seeds separation,
the wort was prepared and corrected with addition of sugar cane until values close to 21%, for its fermentation, obtaining an
artesanal alcoholic beverage drink similar to grape wine. Using tomato tree pulp 2.4 Kg and with addition of 2.5 Kg sugar
for each type of wine, in four replications. Different water amounts (12, 15, 18, 15.5 and 15 l) were added respectively for
getting five types (treatments) of wines, four red wines (samples 1, 2, 3 and 4) and one white wine(sample 5).
Determination on the fermented product obtained was made on the following variables: pH, Total acidity, Volatil acidity
and Total Soluble Solid Content, through (Venezuelan Commission for Industrial Rules) COVENIN RULES 924-83, 3286-
97. Results obtained ranged from 5.01-5.89 for pH , 4.47-6.22 g/l for Total acidity , 0.39-1.71 g/l for Volatile acidity
and 4.3-12.6 °Brix for the content of TSS. The statistical analysis did not indicate significant differences for chemical
variables between obtained wines. The sensorial characteristics evaluated (appearance, color , odor , and body ) following
the mode of central tendency method, showed the highest values (24.6 %) for the wine 1 and the lowest value (12.3 %) for
the wine 5. Results suggested to wine obtained from for sample 1 as the best at the sensorial level.
