Development and evaluation of red mombin ( Spondias purpurea L.) in syrup as fillers in buffalo Mozzarella cheese (Bubalus bubalis)

Abstract
Spondias purpurea
L., is a deciduous tree of tropical America is grown in Mexico and South America, and is originally
from the West Indies, the red mombin belonging to the semi fruit acid, astringent yellow flesh, juicy and pleasant aroma,
and contains the following components: fat, carbohydrates, fiber, calcium, phosphorus, iron, thiamin, riboflavin, niacin,
vitamins A, C and calories. The objective of this study was to make the incorporation of red mombin in different
concentrations of syrup and evaluate them as stuffed with Mozzarella cheese and give added value to these products. Four
formulations were established with red mombin syrup between 20 and 40% of sucrose. The physical-chemical
characteristics (pH, soluble solids, ash and moisture) were determined by COVENIN methods and a completely randomized
design, determined that there were significant differences in soluble solids, ash and moisture as it incorporates the sucrose
red mombin syrup. The evaluation of the acceptability of the attributes color, smell, taste, texture, sweetness and appearance
of cheeses stuffed with red mumbin in syrup at different concentrations was conducted by an untrained panel of 80
consumers. The Mozzarella cheese stuffed with red mombin in syrup with greater acceptance by consumers was the syrup
formulation with 30% sucrose (Wilconxon, p <0.05). The red mombin syrup to be incorporated as fillers in Mozzarella
cheese from buffalo milk improves the flavor attributes, color, texture and appearance.

Elaboración y evaluación de ciruela ( Spondias purpurea L.) en almíbar como rellenos en queso tipo Mozzarella de búfala (Bubalus bubalis)

Resumen
Spondias purpurea
L., es un árbol caducifolio de América tropical, se cultiva en México y suramérica, originario de las
Indias Occidentales. La ciruela de huesito pertenece al grupo de las frutas semi ácidas, de pulpa amarilla astringente, jugosa
y agradable aroma, además contiene los siguientes componentes: grasas, carbohidratos, fibra, calcio, fósforo, hierro,
tiamina, riboflavina, niacina, vitaminas A, C y aporta calorías; el objetivo de la presente investigación fue elaborar ciruela
de huesito en diferentes concentraciones de almíbar y evaluarlas como relleno de queso tipo Mozzarella y darle mayor valor
agregado a estos productos. Se Prepararon 4 concentraciones diferentes de azúcar (entre 20 y 40%) para la preparación del
almíbar. Se determinaron las características fisicoquímicas a las ciruelas en almíbar (pH, sólidos solubles, ceniza y
humedad,) según las normas COVENIN, y mediante un diseño completamente aleatorizado, se determinaron que existían
diferencias significativas en sólidos solubles, ceniza y humedad a medida que se incrementa la concentración de sacarosa al
almíbar. La evaluación de la aceptabilidad de los atributos color, olor, sabor, textura, dulzor y apariencia de los quesos
rellenos con ciruela en almíbar a diferentes concentraciones fue realizado mediante un panel no entrenado de 80
consumidores. El queso tipo Mozzarella relleno con ciruela en almíbar con mayor aceptación de los consumidores fue la
formulación del almíbar con 30% de sacarosa (Wilconxon, P<0,05). Las ciruelas de huesito en almíbar al incorporarse como
rellenos en queso tipo Mozzarella de leche de búfala mejoran los atributos del sabor, color, textura y apariencia
