Abstract

Tropical legumes in Venezuela could contribute to the reduction of imports of soybean flour if could be used as nutritional resource on feeding industry. Protein and minerals content, and also aminoacids profile were determined on legumes grain flour such as Cajanus cajan check for this species in other resources (L.) Millsp. (pigeon pea), Vigna radiata check for this species in other resources (L.) Wilczek (mung bean) and two Vigna unguiculata check for this species in other resources (L.) Walp. varieties (black and white seed), in Maracaibo plane, an arid zone located at 10° 34' N; 71° 44' W. Samples of all legumes were taken. Raw protein values were high, 17.52 % (pigeon pea), 21.21% (black seed cowpea ), 22.50% (white seed cowpea) and 24.25% (mung bean). High levels of potassium were observed in all the legumes flour tested: 1704 (pigeon pea), 1364 (black seed cowpea), 1399 (white seed cowpea) and 1356 mg x100 g flour-1 (mung bean). Calcium values were lower than reported in references in all the legumes tested. Aminoacids profile showed that protein of all legumes tested has adecuated levels of essential aminoacids. Pigeon pea, black and white seed cowpea, and mung bean flour could be used on human feeding as a component of different products.

Resumen

En Venezuela se cultivan leguminosas tropicales que pudiesen contribuir a la disminución de la importación de harina de soya utilizada por la industria de los alimentos, las cuales se requieren evaluar desde el punto de vista nutricional. Para ello se determinó el contenido de proteína, minerales y perfil de aminoácidos en harinas de grano de plantas de Cajanus cajan check for this species in other resources (L.) Millsp. (quinchoncho), Vigna radiata check for this species in other resources (L.) Wilczek (frijol chino) y dos variedades de Vigna unguiculata check for this species in other resources (L.) Walp. (grano de color negro y blanco), sembradas en la planicie de Maracaibo (10° 34' LN; 71° 44' LO). Los valores de proteína cruda fueron 17,52%, para la harina de quinchoncho; 21,21% para la harina de frijol negro; 22,50% para la harina de frijol blanco y 24,25%, para la harina de frijol chino. Las harinas evaluadas mostraron altos niveles de proteína. Un alto contenido de potasio fue observado en las distintas harinas analizadas, presentando el quinchoncho el valor más alto (1704,3 mg/100 g de harina) con respecto a los obtenidos para frijol negro, frijol blanco y frijol chino (1363,6; 1399,4 y 1353,9 mg/100 g harina, respectivamente). El rango de los valores de calcio osciló entre 24,7 y 60,6 mg/100 g harina, los cuales se consideran más bajos que los reportados por otros investigadores. La suma de los aminoácidos esenciales totales en las leguminosas evaluadas varió entre 41,02 y 46,92 g/100 g de proteína, cuyos promedios son similares a los reportados en soya. Por lo tanto, estas harinas podrían utilizarse en la elaboración de alimentos destinados al consumo humano.
