 es Requerimientos y Producción Propia de Alimentos en Ganadería Pastoril: una Tipología en la Provincia de Buenos Aires

Resumen

La mayor parte de los sistemas de producción de carne bovina en la Argentina se basan en el pastoreo directo. Existen complejos subsistemas pastoriles operando dentro de los sistemas de producción ganadera que necesitan ser diferenciados para orientar cambios tecnológicos apropiados. El propósito de este trabajo fue: identificar una tipología de establecimientos ganaderos (EG); relacionar la tipología resultante con características de uso de la tierra, actividad productiva ganadera y localización geográfica, y proponer indicadores que mejor permitan caracterizar los EG con información de recursos alimenticios proveniente de fuentes secundarias. Este análisis comprendió 1 252 establecimientos ganaderos de la provincia de Buenos Aires. A partir de los datos de la Encuesta Nacional Agropecuaria 1999 se construyeron variables de requerimientos ganaderos y producción de recursos. La metodología estadística multivariada permitió: (a) la caracterización general de los EG, (b) realizar una tipología, y (c) descripción de los tipos y comparación entre los mismos. Se obtuvieron tres tipos asociados a distintos niveles tecnológicos de alimentación de bovinos: «EG que suplementan con producción propia», «EG con pastoreo directo de forrajes implantados» y «EG con pastoreo de pastizal natural». El uso de la tierra fue predominantemente mixto (ganadero y agrícola) en los EG de los dos primeros tipos y exclusivamente ganadero en el tercero. La actividad ganadera que predominó en el primer tipo fue ciclo completo y en el tercero cría o cría-recría. El indicador que mejor ha distinguido a los tres tipos fue Indice Neto de Producción Forrajera, mientras que Producción Propia de Suplemento permitió separar al grupo más tecnificado. Se recomienda el uso de ambos indicadores en futuras clasificaciones. En los tres grupos identificados, el mayor conocimiento de la dinámica de la producción y calidad del pastizal natural, pasturas implantadas y forrajes conservados, resulta necesario para la adecuación de la carga y la maximización de la producción, es decir para la mejora de la eficiencia forrajera.

Abstract

Beef cattle production systems in Argentina are based on direct grazing. There are complex grazing subsystems within the beef cattle production systems that need to be differentiated in order to guide appropriate technological changes. The purpose of this work was: to identify a livestock farm (LF) typology; to link the resulting typology with characteristic of use of the land, activities included in the beef production process and geographical localization; and to propose indicators that can allow the characterization of the LF with the information of feed resources of own production from secondary data. This analysis included 1 252 LF of Buenos Aires' province. The variables of cattle requirements and production of resources were built using the data of the Agricultural National Survey 1999. The multivariate analysis allowed: (a) the general characterization of the LF, (b) to construct a typology, and (c) the description of groups and the comparison among them. Three technical levels of feeding were obtained: «The LF that supplement with own production», «The LF in grazing pasture» and «The LF in natural grassland grazing». The use of the land was mainly mixed (livestock and agricultural) within the LF of the first two subsystems and exclusively livestock in the third one. The beef cattle production activity that prevailed in the first subsystem was complete cycle (cows breeding and calf, steer rearing and fattening) and in the third one, cows breeding and calf with or without rearing. The indicator that better allowed a distinction between the three subsystems was the Net Index of Forage Production, while the Supplement of Own Production allowed the separation of the subsystem with more technical level. The use of both indicators is recommended for future classifications. In the three identified groups, the bigger knowledge of production dynamics and natural grasses quality, cultivated pastures and conserved forages, is needed for charge adequacy and production maximization, that is in order to a better forage efficiency.
