Abstract

The carcass and filleting yield of cultivated cachama ( Colossoma macropomum check for this species in other resources ) under intensive conditions were evaluated. The experiment was carried at the Fishing Resources Laboratory, Local Station "El Lago", Zulia state, Venezuela (CIAE-Zulia). 50 cachamas with weight of 750 ± 81.6g and total longitude total of 32.60 ± 1,5cm were used, using a randomized total design with three range of weight (600-700, 701-800 and 801-950 g). Total length (LT), standard length (LE), head length (LC), head height (AC), body thickness (ET); weigh fresh (PF), carcass weight (PC), body weight (PT), fi llet weigh (PFi), and residuals (R) were determined. According to the yield variables carcass yield (% RC); fi llet yield: (% RFi) and waste: (% R) were stimated. Not differences regard to the ET were observed (P>0.05). Significant differences among variables related with yield were observed (P>.05). Biggest % RC and % RFi according to the range of weight of 700-800 g (81.34 and 52.02 %, respectively) were obtenied.

Resumen

Se evaluó el rendimiento en canal y el fileteado de la cachama ( Colossoma macropomum check for this species in other resources ) criada en condiciones intensivas. El procesamiento se realizó en el Laboratorio de Recursos Pesqueros de la Estación Local "El Lago", estado Zulia, Venezuela (CIAE-Zulia). Se emplearon 50 cachamas con peso de 750 ± 81,6g y longitud total de 32,60 ± 1,5cm, mediante un diseño totalmente aleatorizado con tres intervalos de peso (600-700, 701-800 y 801- 950 g). Se determinaron las variables morfométricas concernientes a: longitud total (LT), longitud estándar (LE), longitud de cabeza (LC), altura de cabeza (AC) y espesor del tronco (ET). Los parámetros de peso determinados fueron: peso fresco (PF), peso de la canal (PC), peso del tronco (PT), peso del fi lete (PFi) y residuos (R). Se estimó el rendimiento de la canal (% RC), rendimiento del fi lete: (% RFi) y los desperdicios: (% R). No se encontraron diferencias con respecto al ET (P>0,05). Las variables relacionadas con el rendimiento no exhibieron diferencias significativas (P>0,05). El mayor % RC y % RFi se observó en el intervalo de 600-700 g (82,47 y 52,02 %, respectivamente).
